Qatab is one of the types of delicious and popular Iranian sweets, the originality of which belongs to the cities of Yazd and Kerman.
Qatab Ingredients
- 2 egg yolks
- Yogurt is half a measure
- 100 grams of butter
- 2 cups white flour
- 1 tablespoon jam baking powder
- Walnut or pistachio kernels three-quarters of a measure
- Three-quarters of a cup of powdered sugar
- Rose 1 tbsp
- 1 tablespoon cardamom powder
- Cinnamon half a teaspoon
Ghotab recipe
The first stage
First, take the butter out of the fridge to adjust to the ambient temperature and soften it, then pour the egg yolks into a suitable bowl and stir with a hand mixer until it comes out of the looseness and the texture separates.
second stage
After the egg yolks are mixed, add the butter, which is completely softened, and mix a little to make the eggs smooth with the yolks. Then add the yogurt and mix it well with the other ingredients.
third level
At this stage, mix the white flour and baking powder, then sift and then gradually add to the bowl containing the egg yolk. While adding the flour by hand, knead the dough and add enough flour so that the dough does not stick to your hands.
The fourth stage
Now we put the dough in a hollow dish and cover it with cellophane, then put it in a warm place for the dough to rest for an hour. We make the middle material of the pole to make the dough even.
The fifth step
To do this, chop the pistachio kernels or walnuts so that they are neither powdered nor too large, then pour into a suitable container. Then add 2 tablespoons of powdered sugar along with cinnamon and cardamom powder. Finally, add rose water.
Step Six
Now mix the ingredients well to make them smooth, just be careful not to mix the middle ingredients. After an hour, flatten the dough on a flat surface with a rolling pin so that its diameter is not more than half a centimeter.
Step 7
Now we mold the dough with a round mold, then we put some walnut or pistachio kernel mixture between each molded dough and turn one side of the dough over the other side, so that the dough is semi-circular.
Step 8
Now we press the edges of the dough together with a fork so that the middle thread does not come out of the dough during frying. If we want to make the poles round, after we put the middle thread in the dough, we collect it like a ball and tie its edges with pressure.
The ninth stage
After the poles are ready, place a hollow dish on the heat, like a hot milk, then pour enough oil into the pan so that the poles float in the oil. After the oil is well heated, fry the poles in oil until golden.
The tenth stage
We put the fried poles in a towel with our hands to remove the excess oil, then we roll it in powdered sugar. The important point in rolling sugar in powdered sugar is that if the poles are not cool, they will absorb the powdered sugar, and be sure to let them cool down, then roll them in powdered sugar.

How to prepare a pole in the oven
To bake the poles in the oven, place them in the oven tray, then place in a preheated 180. C oven for 15 minutes. Note that frying poles in oil makes this dessert tastier, but using a healthier oven is more dietary.
