The traditional Abgoosht is one of the most original and complete Iranian dishes with many properties.

ingredients

Onions: 1 large

Sheep tail: a small piece

Small Amani lemon: 2 pieces

Tomatoes: 4 peeled

Lamb: 400 grams

Small potatoes: 4 pieces

Tomato paste: 3 tablespoons

White beans and peas (soak overnight): One cup

Salt, pepper, turmeric, cinnamon, saffron: as needed

Instructions

The first step

To prepare the professional broth, after removing the onion skin, pour it into a pot, add the tail with the meat to the onion, mix the ingredients together, and add the cinnamon, black pepper, and turmeric to the lamp. We do.


Step Two

In the next step, add the chickpeas and beans and pour water over the ingredients. Put a tomato right in the pot and add the Omani lemon. Put the pot on the stove's medium heat for about 5 hours. Let.


Step Three

In the next step and in the last hour of cooking, we add a potato to the ingredients, and then we pour some salt into the pot and put it to cook a few times. Turn off the stove when your broth is set and glazed.


Fourth Step

At this stage, separate the water from other ingredients and crush the tail separately in a bowl and crush it. If you want fatty food, add the bottom to the food water and serve it with fresh pickles and vegetables.


Step Five
